  • 36 cookies Chocolate Sandwich Cookies Finely crushed
  • 1/2 cup Unsalted Butter Melted (115g)
  • 16 oz Cream Cheese Softened (450g)
  • 1.5 cups Confectioners' Sugar Divided (180g)
  • 3 cups Heavy Whipping Cream Chilled (710ml)
  • 2 cups Fresh Strawberries Chopped (300g)
  • 2 cups Fresh Blueberries (300g)
  • 2 tbsp Cornstarch Divided (15g)
  • 1 tbsp Sugar For fruit maceration
  • 1 tbsp Star Sprinkles Red, white, and blue colors

  • 1 9x13 inch baking dish Glass preferred for visual layers
  • 1 Food Processor For crushing cookies
  • 1 Offset spatula For smoothing layers
  • 1 Piping Bag and Star Tip For decorative topping

Method
 

Prepare the Components
  1. Pulse cookies in a food processor until fine. Mix with melted butter and press firmly into a 9x13 dish. Freeze for 15 minutes.
  2. In separate saucepans, cook strawberries and blueberries with 1 tbsp sugar and 1 tbsp cornstarch (slurried) each. Simmer until thickened and glossy. Cool completely.
  3. Beat cream cheese with 1/2 cup sugar until smooth. Fold in 1 cup whipped cream. Separately, whip remaining cream with remaining sugar to stiff peaks.
Assembly
  1. Spread cream cheese mixture over the crust. Layer strawberry filling, then a layer of whipped cream, followed by the blueberry filling.
  2. Pipe swirls of whipped topping over the blueberries. Garnish with star sprinkles and chill for at least 6 hours before slicing.

Notes

Ensure fruit glazes are entirely cold before layering to prevent melting the cream.
Wipe your knife with a warm towel between cuts for clean, professional-looking slices.
