Ingredients
  

  • 1 French baguette Sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 4 oz goat cheese softened
  • 6 slices bacon cooked and crumbled
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves
  • 1/4 tsp black pepper freshly cracked

Method
 

  1. Preheat your oven to 375°F (190°C). Slice the baguette into ½-inch thick rounds. Arrange the slices on a baking sheet, brush them lightly with olive oil, and toast for 8-10 minutes, or until golden brown and crisp.
  2. While the crostini toasts, cook the bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to drain, then crumble it into small pieces once cooled.
  3. Spread a generous layer of softened goat cheese onto each toasted baguette slice.
  4. Sprinkle the crumbled bacon over the goat cheese. Drizzle with honey and finish with a scattering of fresh thyme leaves and a crack of black pepper.
  5. Arrange the crostini on a platter and serve immediately.
