  • 1 lb Salmon fillet Cooked and flaked into pink pieces
  • 1/2 cup Panko breadcrumbs 60g
  • 1 large Egg 50g, lightly beaten
  • 1/4 cup Fresh herbs 10g, finely chopped parsley and dill
  • 2 cloves Garlic 10g, minced
  • 1 large Avocado 200g, pitted
  • 1/4 cup Greek yogurt 60g, plain
  • 1 tbsp Lime juice 15ml
  • 1 tsp Cracked black pepper For garnish
  • 2 wedges Fresh lemon For serving

Equipment

  • 1 Baking Sheet Rimmed sheet lined with parchment paper.
  • 1 Food Processor For blending the avocado cream sauce.
  • 1 Cookie Scoop 1.5-tablespoon size for uniform meatballs.

Method
 

Prepare the Salmon
  1. Lightly sear or roast salmon until opaque, then use a fork to flake it into small pink pieces in a large bowl.
  2. Add panko, egg, chopped green herbs, and garlic to the salmon. Gently toss by hand until just combined.
Bake the Meatballs
  1. Roll 1.5-tablespoon portions into spheres and place on a parchment-lined baking sheet.
  2. Bake at 400°F (200°C) for 12-15 minutes until the exterior is a deep golden-brown.
Blend the Sauce
  1. In a food processor, blend avocado, yogurt, and lime juice until thick, smooth, and light-green.
  2. Transfer sauce to a bowl and top with cracked black pepper and a sprig of fresh dill.

Notes

Ensure salmon is cold before forming balls to prevent falling apart.
For an extra crispy exterior, spray meatballs with olive oil before baking.
