  • 4 oz (113g) Cream Cheese Full-fat brick style
  • 3.4 oz (96g) Instant Banana Pudding Mix One standard box
  • 4 cups (500g) Powdered Sugar Sifted
  • 3 tbsp (45ml) Heavy Whipping Cream Cold
  • 1 tsp (5ml) Vanilla Extract
  • 1/4 tsp (1.5g) Sea Salt
  • 2 whole Vanilla Wafer Cookies For garnish
  • 3 slices Fresh Banana Circular slices

Equipment

  • 1 Stand Mixer Fitted with a paddle attachment.
  • 1 Fine-mesh Sieve For sifting powdered sugar.
  • 1 Mason Jar For presentation.

Method
 

Mixing the Base
  1. In a stand mixer, beat the softened butter and cream cheese on medium-high speed for 3 minutes until light and fluffy.
  2. Turn mixer to low and add the instant banana pudding mix, beating until the color is a uniform pale yellow.
Finishing the Frosting
  1. Slowly add sifted powdered sugar one cup at a time, followed by the vanilla and salt. Mix until smooth.
  2. Add heavy whipping cream one tablespoon at a time while beating on medium speed until a dense, creamy texture is achieved.
  3. Transfer to a jar, create a swirl with a silver spoon, and garnish with vanilla wafers and fresh banana slices.

Notes

Sift the pudding mix with the sugar for the smoothest possible texture.
Only garnish with fresh bananas right before serving to prevent browning.
