Prepare the Base
- Rinse jasmine rice until water is clear. Combine with water and salt in a pot. Bring to a boil, then simmer covered on low for 15 minutes. Let rest for 5 minutes before fluffing.
Cook the Protein and Veggies
- Heat oil in a skillet over medium-high. Add chicken cubes in a single layer. Sear for 4 minutes without moving to develop a crust. Flip and cook for 3 more minutes.
- Reduce heat to medium and add BBQ sauce. Toss chicken for 2 minutes until the sauce is thick, glossy, and caramelized on the edges.
- In a dry skillet over high heat, toast corn kernels for 3-5 minutes until dark charred spots appear.
Assembly
- Place a scoop of rice in a bowl. Arrange chicken, charred corn, black beans, and avocado slices in distinct sections on top. Garnish with green onions and cilantro flakes.
