Ingredients
  

Main Ingredients
  • 2 cups (370g) Jasmine Rice Rinsed thoroughly
  • 3 cups (710ml) Water For cooking rice
  • 1.5 lbs (680g) Chicken Breast Cut into 1-inch cubes
  • 1 cup (240ml) BBQ Sauce Thick and glossy variety
  • 1 cup (150g) Sweet Corn Fresh or frozen
  • 1 can (425g) Black Beans Rinsed and drained
  • 1 large Avocado Sliced
  • 2 tbsp (30ml) Avocado Oil For searing
  • 1 bunch Green Onions Thinly sliced
  • 1 tsp Dried Cilantro Flakes

Equipment

  • 1 Cast Iron Skillet For searing chicken and charring corn.
  • 1 Rice cooker or pot To prepare the jasmine rice.

Method
 

Prepare the Base
  1. Rinse jasmine rice until water is clear. Combine with water and salt in a pot. Bring to a boil, then simmer covered on low for 15 minutes. Let rest for 5 minutes before fluffing.
Cook the Protein and Veggies
  1. Heat oil in a skillet over medium-high. Add chicken cubes in a single layer. Sear for 4 minutes without moving to develop a crust. Flip and cook for 3 more minutes.
  2. Reduce heat to medium and add BBQ sauce. Toss chicken for 2 minutes until the sauce is thick, glossy, and caramelized on the edges.
  3. In a dry skillet over high heat, toast corn kernels for 3-5 minutes until dark charred spots appear.
Assembly
  1. Place a scoop of rice in a bowl. Arrange chicken, charred corn, black beans, and avocado slices in distinct sections on top. Garnish with green onions and cilantro flakes.

Notes

Pat the chicken cubes completely dry before searing to ensure a golden-brown crust.
Use a high-sugar BBQ sauce for the best glossy finish.
