Ingredients
  

  • 3 cups cooked, shredded chicken a store-bought rotisserie chicken works perfectly
  • 1 cup BBQ sauce use your favorite brand and flavor
  • 4 large flour tortillas about 10 inches in diameter
  • 1 cup shredded Colby Jack or cheddar cheese
  • 1/2 cup diced red onion
  • 1 cup shredded lettuce
  • 1/2 cup ranch dressing

Method
 

  1. In a medium bowl, mix the shredded chicken and BBQ sauce until the chicken is fully coated.
  2. Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or in the microwave for 15-20 seconds. This makes them pliable and easier to fold.
  3. Lay a warm tortilla flat. Layer a quarter of the cheese, BBQ chicken mixture, red onion, and shredded lettuce down the center. Drizzle with ranch dressing.
  4. Fold in the sides of the tortilla, then tightly roll it up from the bottom to enclose the filling.
  5. For a crispy exterior and melted cheese, place the wrap seam-side down in a lightly oiled skillet over medium-high heat. Cook for 1-2 minutes per side, until golden brown and toasted.
  6. Slice the wraps in half and serve immediately.

Notes

Use a rotisserie chicken for a super-fast shortcut.
Don't overfill your wraps, or they'll be difficult to fold and may fall apart.
Warming the tortillas is key to preventing them from cracking when you roll them.
