Preparation
- Combine rinsed rice with 3 cups (710ml) of water and a pinch of salt. Bring to a boil, reduce to low, cover, and simmer for 15-18 minutes until fluffy. Fluff with a fork.
- Boil the florets for 2-3 minutes until bright green and tender-crisp. Immediately shock in ice water, drain, and pat dry.
The Sauce and Assembly
- In a saucepan, melt butter. Whisk in flour for 1-2 minutes until a blonde roux forms.
- Slowly whisk in milk. Simmer until thickened. Stir in 1.5 cups (168g) of cheddar and seasonings until smooth.
- Fold rice, broccoli, and sauce together in a bowl. Transfer to the white ceramic baking dish. Top with remaining 1.5 cups (168g) of cheddar.
The Bake
- Bake at 375°F (190°C) for 20 minutes. Finish under the broiler for 2-3 minutes until bubbly with golden-brown toasted spots.
Notes
Always use fresh block cheddar for the best melt and toasted crust result.
