- Heat avocado oil in a 12-inch cast iron skillet over medium-high heat. Add cubed potatoes in a single layer. Cook undisturbed for 5-6 minutes until charred edges form. Season with salt, pepper, and garlic powder, then flip and cook for another 8-10 minutes until golden-brown.
- Push potatoes to the side or remove them. Add diced ham to the skillet and cook for 3-4 minutes until the pink cubes have slightly seared, caramelized surfaces.
- Reduce heat to medium-low. Add butter to the pan. Pour in whisked eggs and gently push with a spatula to create large, bright yellow, soft curds.
- Fold potatoes and ham back into the eggs. Top with freshly grated sharp cheddar. Cover with a lid for 60 seconds until thick pools of cheese form. Garnish with sliced green onions and serve.
