Method
- Preheat your oven to 400°F (200°C).
- On a large baking sheet, toss the cubed potatoes with olive oil, salt, and pepper. Spread into a single layer and bake for 25-30 minutes, until golden and fork-tender.
- While potatoes roast, cook the ground beef and onion in a large skillet over medium-high heat until beef is browned. Drain excess fat.
- Stir in the minced garlic and cook for 1 minute. Add the taco seasoning and water, and simmer for 3-4 minutes until thickened.
- In a large bowl, gently combine the roasted potatoes with the taco meat mixture. Transfer to a 9x13-inch baking dish.
- Sprinkle the shredded cheese evenly over the top.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly. Let it rest for a few minutes before serving with your favorite toppings.
Notes
For the crispiest potatoes, ensure they are not overcrowded on the baking sheet; use two sheets if necessary.
Grating your own cheese from a block will result in a smoother, creamier melt.
Feel free to customize with different proteins like ground turkey or add vegetables like corn and bell peppers to the meat mixture.
