  • 2 lbs Russet potatoes cubed into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Taco Meat & Assembly
  • 1 lb lean ground beef 80/20 or 90/10
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 packet (1 oz) taco seasoning
  • 1/4 cup water
  • 2 cups shredded cheese blend cheddar and Monterey Jack
Optional Toppings
  • Sour cream
  • Diced tomatoes
  • Sliced jalapeños
  • Fresh cilantro chopped

  • 1 Large Skillet
  • 1 9x13 inch baking dish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the cubed potatoes with olive oil, salt, and pepper. Spread into a single layer and bake for 25-30 minutes, until golden and fork-tender.
  3. While potatoes roast, cook the ground beef and onion in a large skillet over medium-high heat until beef is browned. Drain excess fat.
  4. Stir in the minced garlic and cook for 1 minute. Add the taco seasoning and water, and simmer for 3-4 minutes until thickened.
  5. In a large bowl, gently combine the roasted potatoes with the taco meat mixture. Transfer to a 9x13-inch baking dish.
  6. Sprinkle the shredded cheese evenly over the top.
  7. Bake for 15-20 minutes, or until the cheese is melted and bubbly. Let it rest for a few minutes before serving with your favorite toppings.

For the crispiest potatoes, ensure they are not overcrowded on the baking sheet; use two sheets if necessary.
