Ingredients
  

Main Recipe
  • 4 cups shredded zucchini Approx 600g, moisture removed
  • 2 large eggs Beaten
  • 1 tsp sea salt For drawing out moisture
  • 1.5 cups mozzarella cheese Divided use
  • 0.5 cups sharp cheddar cheese Shredded
  • 1 tbsp garlic powder Divided use
  • 1 tsp dried oregano flakes
  • 0.5 tsp red chili flakes
  • 0.5 cups tomato marinara sauce Smooth, for dipping

Equipment

  • 1 Box Grater For finely shredding zucchini
  • 1 Cheesecloth To squeeze moisture from zucchini
  • 1 Baking Sheet Rectangular tray
  • 1 Parchment Paper To prevent sticking

Method
 

Prepare the Zucchini
  1. Shred 4 cups of zucchini. Toss with salt in a bowl and let sit for 10 minutes to release water.
  2. Using a cheesecloth, squeeze the zucchini until very dry. You should remove about 3/4 cup of liquid.
Bake the Base
  1. Combine zucchini, beaten eggs, 1/2 cup mozzarella, and half the garlic powder. Mix well.
  2. Press onto a parchment-lined rectangular tray. Bake at 400°F (200°C) for 15-20 minutes until firm and golden.
Cheese and Broil
  1. Top with remaining mozzarella, cheddar, oregano, chili flakes, and remaining garlic powder.
  2. Broil on high for 2-4 minutes until cheese is bubbly and has toasted brown spots. Slice and serve with marinara.

Notes

Always squeeze the zucchini twice to ensure a crispy base.
Use sharp cheddar for those iconic toasted golden spots.
