  • 2 tbsp (30ml) Amaretto Liqueur For the soak
Mascarpone Filling
  • 16 oz (450g) Mascarpone Cheese Slightly softened
  • 1 cup (240ml) Heavy Whipping Cream Cold
  • 1/2 cup (60g) Powdered Sugar Sifted
  • 2 tbsp (30ml) Amaretto Liqueur For the cream
Cherry Compote
  • 2 cups (300g) Cherries Pitted, fresh or frozen
  • 1/4 cup (50g) Granulated Sugar
  • 2 tbsp (30ml) Amaretto Liqueur
Toppings
  • 2 tbsp (15g) Dark Cocoa Powder For dusting
  • 3 whole Fresh Cherries With stems attached
  • 1 sprig Fresh Mint

Equipment

  • 1 Clear glass dessert bowl Used to show horizontal layers
  • 1 Small saucepan For cherry compote
  • 1 Stand mixer or hand mixer For whipping cream
  • 1 Fine-mesh Sieve For cocoa dusting

Method

Prepare the Fruit Layer
  1. In a small saucepan, combine cherries, 2 tbsp Amaretto, and granulated sugar. Simmer over medium heat for 8-10 minutes until syrupy. Keep cherries whole. Cool completely.
Prepare the Creams
  1. Whisk mascarpone, powdered sugar, and 2 tbsp Amaretto until smooth.
  2. In a separate bowl, whip heavy cream to stiff peaks, then fold into the mascarpone mixture until ivory and smooth.
Assembly
  1. Dip ladyfingers in espresso/amaretto mix (2 seconds per side) and line the bottom of a glass bowl. Add half the cream, then all the compote.
  2. Add a second layer of soaked ladyfingers and the remaining cream. Dust with dark cocoa powder using a sieve. Garnish with fresh cherries and mint.

Notes

Ensure the cherry compote is completely cold before layering to prevent the cream from melting.
For clean slices, let the tiramisu set in the refrigerator for at least 6 hours.
