Prepare the Fruit Layer
- In a small saucepan, combine cherries, 2 tbsp Amaretto, and granulated sugar. Simmer over medium heat for 8-10 minutes until syrupy. Keep cherries whole. Cool completely.
Prepare the Creams
- Whisk mascarpone, powdered sugar, and 2 tbsp Amaretto until smooth.
- In a separate bowl, whip heavy cream to stiff peaks, then fold into the mascarpone mixture until ivory and smooth.
Assembly
- Dip ladyfingers in espresso/amaretto mix (2 seconds per side) and line the bottom of a glass bowl. Add half the cream, then all the compote.
- Add a second layer of soaked ladyfingers and the remaining cream. Dust with dark cocoa powder using a sieve. Garnish with fresh cherries and mint.
Notes
Ensure the cherry compote is completely cold before layering to prevent the cream from melting.
