  • 1 lb Chicken Breast 450g, sliced into thin cutlets
  • 6 strips Smoked Bacon 150g, thick-cut
  • 3 slices White Bread Sturdy or sourdough preferred
  • 2 slices Provolone Cheese 40g, or cheddar
  • 3 tbsp Mayonnaise 45ml, creamy white sauce
  • 2 slices Red Tomato 60g, vine-ripened
  • 2 leaves Green Leaf Lettuce Fresh and crisp
  • 1 tbsp Neutral Oil 15ml, for searing

Equipment

  • 1 Cast Iron Skillet For searing chicken and bacon
  • 1 Wooden Sandwich Pick To hold the stack together
  • 1 Serrated Knife For clean slicing

Method
 

Prepare the Chicken
  1. Pat chicken dry, season with salt and pepper. Sear in hot oil for 4-5 minutes per side until golden edges appear.
  2. Place cheese on chicken in the last minute of cooking; cover briefly to melt.
Prepare the Bacon and Bread
  1. Cook bacon in a skillet over medium heat until wavy and glistening. Drain on paper towels.
  2. Toast bread slices until golden-brown and sturdy.
Assembly
  1. Spread sauce on bread. Layer lettuce and tomato. Add second bread slice with sauce, then chicken, cheese, and bacon. Top with final bread slice.
  2. Press down gently and secure with a wooden sandwich pick.

Notes

Use room temperature chicken for the best sear.
Always toast the bread right before assembly to prevent sogginess.
