Make the Dough
- Combine warm milk, sugar, and yeast in a stand mixer bowl; let foam for 5 minutes.
- Add eggs and flour; mix with a dough hook. Gradually incorporate softened butter one tablespoon at a time until the dough is glossy and passes the windowpane test.
Rise and Shape
- Let the dough rise in a warm spot until doubled in size (approx 90 minutes).
- Divide into 12 balls, place on baking sheet, and let rise for 45 minutes. Indent the centers to create a deep well.
Fill and Bake
- Spoon thick vanilla custard into the wells and top with dark chocolate chips. Egg wash the edges.
- Bake at 375°F (190°C) for 18-22 minutes until deep golden-brown. Dust with powdered sugar once cooled slightly.
