Preparation
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan, lining with parchment paper for easy removal.
- In a large bowl, mash bananas. Stir in melted butter, sugar, egg, and vanilla until smooth.
Assembly
- Gently fold in flour, baking soda, and salt until just combined—do not over-mix.
- Pour half the batter into the pan. Top with 3/4 of the cinnamon sugar. Add remaining batter, then remaining cinnamon sugar. Use a skewer to swirl once in a Z-pattern.
Bake and Finish
- Bake for 55-65 minutes until a deep golden-brown crust forms and a tester comes out clean.
- Once cooled, whisk powdered sugar and milk into a thick paste. Pour over the bread, allowing heavy droplets to form on the sides.
Notes
Use very overripe bananas for the best crumb moisture.
