  • 1 cup (225g) Full-Fat Cottage Cheese 4% milkfat recommended for best caramelization
  • 1/2 tsp (1g) Cracked Black Pepper Freshly cracked for best flavor
  • 1/2 tsp (0.2g) Dried Oregano Flakes Fine flakes for visual appeal

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with high-quality parchment paper.
  2. Scoop 1 tablespoon dollops of cottage cheese onto the parchment paper, spacing them at least 2 inches apart to allow for spreading.
Baking
  1. Gently flatten each dollop with the back of a spoon to form a thin, circular shape. Sprinkle with cracked black pepper and dried oregano.
  2. Bake for 30-35 minutes. Look for deep golden brown, caramelized edges and a lacy, semi-translucent center.
  3. Remove from the oven and let the chips cool on the baking sheet for 5-10 minutes. They will crisp up significantly as they cool.

Notes

Ensure you use full-fat cottage cheese for the best lacy texture and flavor.
If the cheese is very watery, strain it through a mesh sieve before portioning.
