Ingredients
  

  • 1 cup full-fat cottage cheese Small curd works best.
  • 1 cup almond flour Fine-blanched for best results.
  • 2 tbsp flaxseed meal
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 large egg white Optional, for extra crispiness

Equipment

  • 1 Baking Sheet
  • 1 Food Processor or Blender
  • 1 Parchment Paper
  • 1 Offset spatula

Method
 

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a food processor or high-speed blender, combine the cottage cheese, almond flour, flaxseed meal, garlic powder, onion powder, salt, and optional egg white. Blend until the mixture is completely smooth.
  3. Pour the batter onto the prepared baking sheet. Using an offset spatula, spread it into a very thin, even rectangle.
  4. Bake for 15 minutes until the surface appears dry and set.
  5. Remove from the oven and use a pizza cutter or knife to score the dough into cracker shapes.
  6. Return to the oven and bake for an additional 10-15 minutes, or until golden brown and crispy. Watch carefully to prevent burning.
  7. Let the crackers cool completely on the baking sheet before breaking them apart. They will get crispier as they cool.
