- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a food processor or high-speed blender, combine the cottage cheese, almond flour, flaxseed meal, garlic powder, onion powder, salt, and optional egg white. Blend until the mixture is completely smooth.
- Pour the batter onto the prepared baking sheet. Using an offset spatula, spread it into a very thin, even rectangle.
- Bake for 15 minutes until the surface appears dry and set.
- Remove from the oven and use a pizza cutter or knife to score the dough into cracker shapes.
- Return to the oven and bake for an additional 10-15 minutes, or until golden brown and crispy. Watch carefully to prevent burning.
- Let the crackers cool completely on the baking sheet before breaking them apart. They will get crispier as they cool.
