Ingredients

Pizza Components
  • 1 cup Full-Fat Cottage Cheese 225g, small curd preferred
  • 2 large Eggs 100g, acting as a binder
  • 1/4 cup Grated Parmesan Cheese 25g, helps with browning
  • 1 tsp Garlic Powder 3g
  • 1/2 tsp Dried Oregano 1g, plus extra for topping
  • 1/3 cup Pizza Sauce 80ml, low moisture
  • 1 cup Shredded Mozzarella 113g, low-moisture part-skim
  • 15 slices Pepperoni 30g, thin-cut for curling
  • 1 handful Fresh Basil Leaves For garnish after baking

Equipment

  • 1 High-speed blender Used to emulsify the cottage cheese and eggs into a smooth batter.
  • 1 Baking Sheet Standard rimmed baking sheet.
  • 1 White Parchment Paper Crucial for preventing sticking and achieving crispy edges.

Method

Prepare and Bake the Base
  1. Preheat oven to 400°F (200°C). Blend cottage cheese, eggs, parmesan, and garlic powder until completely smooth.
  2. Pour batter onto a parchment-lined tray and spread into a 10-inch circle about 1/4 inch thick.
  3. Bake for 20-25 minutes until the edges are deep golden-brown and the center is firm to the touch.
Topping and Final Finish
  1. Spread sauce over the crust, add mozzarella, pepperoni, and a sprinkle of dried oregano.
  2. Bake for 5-8 minutes, finishing with a 2-minute broil until cheese is bubbly with toasted brown spots and pepperoni is curled.
  3. Rest for 3 minutes, then garnish with fresh basil leaves before slicing.

Notes

Ensure you blend the batter until perfectly smooth to avoid a lumpy texture.
Use the broiler for the last 2 minutes to get those signature crispy pepperoni curls and toasted cheese spots.
