  • 4 slices Yellow American Cheese For the perfect melt
  • 2 Brioche Buns Glossy and golden
  • 2 tbsp Unsalted Butter 30g, for toasting
  • 1/2 tsp Kosher Salt To taste
  • 1/4 tsp Black Pepper Freshly cracked
  • 1/2 cup Mayonnaise 120ml
  • 2 tbsp Ketchup 30ml
  • 1 tbsp Yellow Mustard 15ml
  • 1/4 White Onion Finely diced
  • 6 slices Dill Pickles Thinly sliced

Equipment

  • 1 Cast Iron Skillet Essential for heat retention.
  • 1 Stiff Metal Spatula Must be non-flexible for smashing.
  • 1 Parchment Paper Prevents sticking during the smash.

Method
 

Prep
  1. Mix mayo, ketchup, and mustard to create the creamy orange sauce.
  2. Butter and toast brioche buns in a skillet until golden brown.
The Smash
  1. Place cold beef balls on a ripping hot cast iron. Smash with a spatula and parchment paper until paper-thin with jagged edges.
  2. Flip after 2 minutes once a dark crust forms. Add American cheese and stack patties.

Notes

Use cold meat for better lacy edges.
Do not use a non-stick pan; cast iron is required for the best crust.
