Ingredients
  

  • 2 lbs lean ground beef 85/15 or 90/10 recommended
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 2 lbs Yukon Gold potatoes thinly sliced (about 1/4-inch thick)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 cups shredded sharp cheddar cheese divided

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef with the diced onion until the beef is no longer pink. Drain off any excess grease. Stir in the minced garlic and cook for another minute until fragrant.
  2. In a medium bowl, whisk together the cream of mushroom soup, cheddar cheese soup, beef broth, Worcestershire sauce, salt, pepper, and garlic powder until smooth.
  3. Spread half of the sliced potatoes in an even layer on the bottom of your crockpot. Top with half of the ground beef mixture. Pour half of the sauce over the top. Repeat the layers with the remaining potatoes, beef, and sauce.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  5. Sprinkle the shredded cheddar cheese over the top of the casserole. Cover and cook for another 15 minutes, or until the cheese is melted and bubbly.

Tip 1: For extra flavor, sprinkle some fresh parsley or chives over the top before serving.
