  • 1/2 cup Sun-Dried Tomatoes Oil-packed, chopped (60g)
  • 1 cup Heavy Cream (240ml)
  • 1/2 cup Parmesan Cheese Freshly grated (50g)
  • 1/2 cup Chicken Broth (120ml)
  • 4 cloves Garlic Minced (20g)
  • 1 tsp Red Pepper Flakes Crushed (2g)
  • 1 tbsp Cornstarch Mixed with 1 tbsp water
  • 1/4 cup Fresh Parsley Chopped (10g)

Equipment

  • 1 6-Quart Slow Cooker Large enough to submerge chicken.
  • 1 Large Skillet For searing the chicken breasts.
  • 1 Chef's Knife For clean slicing.

Method

Preparation
  1. Heat tomato oil in a skillet. Season chicken and sear 3-4 mins per side until golden brown.
  2. Place chicken in crockpot. Whisk broth, garlic, tomatoes, and flakes; pour over chicken. Cook LOW for 3-4 hours.
  3. Remove chicken. Whisk in cream, parmesan, and cornstarch slurry. Cook on HIGH for 20 mins until glossy.
  4. Slice chicken and return to sauce. Garnish with fresh parsley and serve in a white bowl.

Notes

Use the oil from the tomato jar for the best flavor.
Always rest the chicken before slicing to keep it moist.
