  • 3 large Hard-Boiled Eggs chopped
  • 1/2 cup Red Bell Pepper 120ml, finely diced
  • 1/2 cup Green Bell Pepper 120ml, finely diced
  • 1/2 cup Celery 120ml, finely diced
  • 1.5 cups Mayonnaise 355ml, full fat for gloss
  • 1 tbsp Apple Cider Vinegar 15ml
  • 2 tsp Granulated Sugar 10g
  • 1/2 tsp Ground Paprika for garnish
  • 1 tsp Dried Parsley Flakes for garnish

Method
 

Prep and Cook
  1. Cook the elbow macaroni in salted boiling water for 8-9 minutes until tender-yellow. Drain and rinse under cold water until completely cool.
  2. Finely dice the red pepper, green pepper, and celery into uniform 1/4-inch pieces. Chop the hard-boiled eggs.
  3. In a separate bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper until thick, white, and glossy.
  4. In a white ceramic bowl, combine cooled noodles, vegetables, and eggs. Fold in the dressing until every noodle is thoroughly coated.
  5. Smooth the surface and sprinkle with ground paprika and dried parsley flakes for a professional finish.

Notes

Ensure the pasta is completely cold before adding the dressing to prevent it from breaking.
