Preparation
- Preheat oven to 375°F (190°C). Rinse rice and place in a 9x13 inch white ceramic baking dish with chicken broth and lemon juice.
- Season chicken chunks. Heat oil in a skillet and sear chicken for 2-3 minutes per side until golden-brown and charred on the edges.
- Nestle chicken into the rice. Cover tightly with foil and bake for 30-35 minutes until rice is fluffy and liquid is absorbed.
- Remove from oven, let rest 5 mins. Top with dollops of tzatziki, cucumber slices, cherry tomatoes, feta, dill, and cracked pepper.
