  • 1.5 lbs chicken breast cut into 1-inch chunks (680g)
  • 2 cups white rice Basmati or Jasmine, rinsed (370g)
  • 3 cups chicken broth low-sodium (710ml)
  • 2 tbsp extra virgin olive oil for searing (30ml)
  • 1 cup tzatziki sauce thick Greek-style (240ml)
  • 1 medium English cucumber thinly sliced (300g)
  • 1 cup cherry tomatoes halved (150g)
  • 1/2 cup feta cheese crumbled (75g)
  • 1/4 cup fresh dill finely chopped (10g)
  • 1 tsp cracked black pepper to garnish

Equipment

  • 1 White Rectangular Ceramic Baking Dish 9x13 inch size preferred
  • 1 Heavy-bottomed Skillet For searing the chicken

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Rinse rice and place in a 9x13 inch white ceramic baking dish with chicken broth and lemon juice.
  2. Season chicken chunks. Heat oil in a skillet and sear chicken for 2-3 minutes per side until golden-brown and charred on the edges.
  3. Nestle chicken into the rice. Cover tightly with foil and bake for 30-35 minutes until rice is fluffy and liquid is absorbed.
  4. Remove from oven, let rest 5 mins. Top with dollops of tzatziki, cucumber slices, cherry tomatoes, feta, dill, and cracked pepper.

Notes

Sear the chicken first for the best visual and flavor results.
Use long-grain rice to ensure the grains stay distinct and fluffy.
