- Place a large cast iron skillet over medium-high heat and add the olive oil. Once shimmering, add the ground turkey. Break it apart and cook for 6-8 minutes until no longer pink and well browned. Drain excess fat.
- Sprinkle the taco seasoning, salt, and pepper over the turkey. Add the undrained diced tomatoes, rinsed black beans, and corn. Stir to combine, bring to a simmer, and cook for 5-7 minutes until slightly thickened.
- Reduce heat to low and sprinkle the shredded cheese over the center of the skillet. Cover with a lid for 2-3 minutes until the cheese is thick, gooey, and completely melted.
