- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Mix in the green gel food coloring until the dough reaches a vibrant Grinch-green color.
- On low speed, gradually add the dry ingredients to the wet ingredients until just combined. Do not overmix.
- Scoop and roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
- Gently press one red heart sprinkle into the center of each cookie dough ball.
- Bake for 9-11 minutes, until the edges are set and lightly golden. The centers will still be soft.
- Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
