  • 4 cups sweet potatoes Peeled and cut into uniform 1/2-inch cubes.

  • 1.5 cups red onion Cut into thick wedges with the root intact.
  • 3 tbsp olive oil Divided for coating the vegetables.
  • 1 tbsp dried oregano flakes Divided.
  • 1 tsp coarse sea salt Divided.
  • 0.5 tsp black pepper Freshly cracked, yielding visible specks.

Method
 

Step-by-Step Directions
  1. Preheat your oven to 400°F (200°C). Wash all produce thoroughly. Peel the sweet potatoes and cut them into 1/2-inch cubes. Slice the smoked sausage diagonally into 1/2-inch thick pieces, and cut the red onion into thick wedges.
  2. Place the sweet potato cubes and red onion wedges onto your metal baking tray. Drizzle with 1.5 tbsp of olive oil and sprinkle with half of the dried oregano flakes, coarse sea salt, and black pepper. Toss to coat and spread evenly. Roast for 15 minutes.
  3. Remove the tray from the oven. Add the thick diagonal slices of smoked sausage and the broccoli florets. Drizzle with the remaining 1.5 tbsp of olive oil and sprinkle the rest of the seasonings over the top.
  4. Toss gently to combine, then spread the ingredients evenly across the pan again. Return to the oven and bake for an additional 15 to 20 minutes until the sweet potatoes have lightly browned edges, the broccoli is charred, and the sausage edges are glistening and caramelized.

Do Not Crowd the Pan: Ensure the ingredients are evenly spread out so they roast instead of steaming.
