- Heat 1 tbsp of sesame oil in a large skillet. Add ground beef and sear undisturbed until a deep golden-brown crust forms. Break into crumbles and cook until no longer pink.
- Add minced garlic and grated ginger to the center of the pan. Sauté for 30-45 seconds until fragrant.
- Stir in soy sauce, shredded cabbage, and carrots. Toss constantly until cabbage is wilted but still slightly crisp (3-5 minutes).
- Remove from heat. Top heavily with sliced scallions and a mix of white and black sesame seeds before serving in a dark bowl.

Use a heavy skillet to prevent the cabbage from steaming.
