  • 1 lb (454g) Ground Beef 80/20 blend preferred
  • 1 lb (454g) Green Cabbage Thinly shredded
  • 1 cup (150g) Matchstick Carrots Vibrant orange
  • 1/4 cup (60ml) Low-Sodium Soy Sauce The base for the dark glaze
  • 1 tbsp (15g) Fresh Ginger Grated
  • 2 cloves (10g) Garlic Minced
  • 2 tbsp (30ml) Toasted Sesame Oil Divided use
  • 1/4 cup (25g) Scallions Thinly sliced
  • 1 tbsp (9g) White and Black Sesame Seeds Toasted

Equipment

  • 1 Large Cast Iron Skillet or Wok Essential for a high-heat sear.
  • 1 Microplane For grating fresh ginger and garlic.

Method
 

Cooking Process
  1. Heat 1 tbsp of sesame oil in a large skillet. Add ground beef and sear undisturbed until a deep golden-brown crust forms. Break into crumbles and cook until no longer pink.
  2. Add minced garlic and grated ginger to the center of the pan. Sauté for 30-45 seconds until fragrant.
  3. Stir in soy sauce, shredded cabbage, and carrots. Toss constantly until cabbage is wilted but still slightly crisp (3-5 minutes).
  4. Remove from heat. Top heavily with sliced scallions and a mix of white and black sesame seeds before serving in a dark bowl.

Notes

Use a heavy skillet to prevent the cabbage from steaming.
Always use fresh ginger for the best aroma.
