Ingredients
  

  • 1 tbsp Olive Oil
  • 1 lb Ground Pork
  • 1 Yellow Onion chopped
  • 3 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
  • 8 oz Mushrooms sliced
  • 6 cups Chicken Broth low sodium
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 16 oz Coleslaw Mix a bag of shredded cabbage and carrots
  • 1 tsp Toasted Sesame Oil
  • 1 tsp Sriracha optional, or more to taste
  • Sliced Green Onions for garnish
  • Crispy Wonton Strips for garnish

Equipment

  • 1 Large Dutch oven or pot
  • 1 Wooden spoon

Method
 

  1. In a large Dutch oven or pot, heat olive oil over medium-high heat. Add the ground pork and cook until browned, breaking it up with a spoon. Drain any excess grease.
  2. Add the chopped yellow onion to the pot and cook for 3-4 minutes until softened. Stir in the minced garlic and grated ginger and cook for another minute until fragrant.
  3. Pour in the chicken broth and soy sauce, then add the sliced mushrooms. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Stir in the bag of coleslaw mix. Continue to simmer for 5-7 minutes, until the cabbage reaches your desired tenderness.
  5. Turn off the heat and stir in the toasted sesame oil and sriracha (if using). Ladle the soup into bowls and garnish with sliced green onions and crispy wonton strips before serving.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
Variations: Substitute ground pork with ground chicken or turkey.
