  • 1 cup granulated sugar plus 1 tbsp for sprinkling (200g)
  • 2 large eggs room temperature
  • 1 tsp vanilla extract 5ml
  • 1 1/2 cups all-purpose flour 190g
  • 1 1/2 tsp baking powder 6g
  • 1/2 cup whole milk 120ml
  • 3-4 large fresh peaches thinly sliced into 1/8-inch wedges
  • 2 tbsp apricot preserves thinned with water for glaze (30ml)

Equipment

  • 1 9-inch dark metal round baking pan Essential for even browning and caramelized edges.
  • 1 Stand mixer or hand mixer Used for creaming butter and sugar.

Method
 

Batter Preparation
  1. Preheat oven to 350°F (175°C). Cream softened butter and 1 cup sugar in a mixer until light and fluffy, about 3-4 minutes.
  2. Beat in eggs one at a time, followed by the vanilla extract.
  3. Whisk flour and baking powder. Gradually add to the butter mixture, alternating with milk. Do not overmix.
Assembly and Baking
  1. Pour batter into a greased dark metal pan. Arrange peach slices in concentric rings, overlapping slightly. Sprinkle with 1 tbsp sugar.
  2. Bake for 40-45 minutes until the cake is golden brown and a toothpick comes out clean.
  3. Warm apricot preserves and brush over the hot cake to create a shiny glaze.
