Batter Preparation
- Preheat oven to 350°F (175°C). Cream softened butter and 1 cup sugar in a mixer until light and fluffy, about 3-4 minutes.
- Beat in eggs one at a time, followed by the vanilla extract.
- Whisk flour and baking powder. Gradually add to the butter mixture, alternating with milk. Do not overmix.
Assembly and Baking
- Pour batter into a greased dark metal pan. Arrange peach slices in concentric rings, overlapping slightly. Sprinkle with 1 tbsp sugar.
- Bake for 40-45 minutes until the cake is golden brown and a toothpick comes out clean.
- Warm apricot preserves and brush over the hot cake to create a shiny glaze.
