Ingredients
  

  • 1.5 lbs top sirloin steak cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley chopped

Method
 

  1. Pat the steak cubes completely dry with paper towels. Season generously all over with salt and pepper.
  2. Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering. Carefully add the steak in a single layer, ensuring not to overcrowd the pan (work in batches if needed). Cook for 2-3 minutes without moving to develop a deep brown crust, then flip and cook for another 2-3 minutes for medium-rare.
  3. Reduce heat to medium-low. Add the butter and minced garlic to the skillet. Cook for 30-60 seconds, stirring constantly, until the butter is melted and the garlic is fragrant. Be careful not to burn the garlic.
  4. Return the steak to the skillet, add the chopped fresh parsley, and toss to coat everything in the garlic butter sauce. Serve immediately.

Notes

Don't Crowd the Pan: For the best sear, make sure the steak bites are in a single layer with space between them. Cook in two batches if necessary.
Don't Burn the Garlic: Garlic can burn quickly. Turn the heat down before adding it to the pan and cook only until it's fragrant (about 30-60 seconds).
Steak Doneness: Cook time will vary based on the thickness of your steak cubes and desired doneness. Use an instant-read thermometer for perfect results (130-135°F for medium-rare).
