Preparation
- Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper.
- In a large bowl, combine ground chicken, minced garlic, half the parsley, oregano, red pepper flakes, 3/4 cup parmesan, 1/2 cup breadcrumbs, and eggs. Mix until just combined.
Baking
- Form the mixture into a rectangular loaf on the baking sheet. Brush the top and sides with olive oil.
- Combine remaining breadcrumbs and parmesan. Press onto the top of the loaf. Bake for 40-45 minutes until the internal temperature reaches 165°F (74°C) and the crust is bubbly and golden with charred spots.

Let the meatloaf rest for 10 minutes before slicing to ensure it stays moist.
