  • 1 head White Cauliflower approx. 600g, cut into florets
  • 3 large Carrots 225g, sliced into thick rounds
  • 1 each Red and Yellow Bell Peppers cut into chunks
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 5 cloves Garlic 20g, minced
  • 1 tsp Dried Oregano 5ml
  • 1 tsp Dried Thyme 5ml
  • 1 tsp Sea Salt 5g
  • 1/2 tsp Black Pepper 2.5g

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Prepare a large rimmed baking sheet.
  2. Wash and dry the broccoli, cauliflower, carrots, and peppers. Cut into specified florets, rounds, and chunks.
Seasoning
  1. Place all vegetables in a mixing bowl. Drizzle with 1/4 cup (60ml) olive oil and toss to ensure a glistening sheen.
  2. Sprinkle with dried oregano, thyme, salt, pepper, and minced garlic. Toss again to distribute herb flecks evenly.
Roasting
  1. Spread in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway through until broccoli tips are charred and cauliflower is golden-brown.
  2. Transfer the rustic heap to a white ceramic dish and serve immediately while crispy.

Notes

Use a high temperature (425°F) to ensure charring without overcooking the inside.
Don't crowd the pan to avoid steaming.
