- In a medium bowl, combine the Greek yogurt, grated and squeezed cucumber, fresh lemon juice, dill, and minced garlic. Season with salt and pepper to taste. Stir well, cover, and refrigerate for at least 20 minutes to allow flavors to meld.
- In a large bowl, gently combine the ground chicken, crumbled feta, diced red onion, egg, garlic, lemon zest, dill, oregano, salt, and pepper. Mix with your hands until just combined, being careful not to overmix.
- Divide the mixture into four equal portions. Gently shape each portion into a patty that is about 1/2-inch thick.
- Preheat a grill or a large skillet over medium-high heat. Lightly oil the grates or the pan. Cook the patties for 5-7 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Lightly toast the burger buns, if desired. Place a cooked chicken patty on each bottom bun. Top generously with the homemade tzatziki sauce and your favorite toppings like lettuce, tomato, and red onion slices. Serve immediately.
Notes
Tip 1: Do not overmix the ground chicken mixture, as this can lead to tough burgers. Mix just until the ingredients are evenly distributed.
Tip 2: Squeezing the excess moisture from the grated cucumber is a critical step for a thick and creamy tzatziki sauce.
Tip 3: For best flavor, use a block of feta in brine and crumble it yourself rather than buying pre-crumbled feta.
