  • 1 lb boneless skinless chicken breast Cut into 1-inch cubes
  • 1 tsp dried oregano Preferably Greek
  • 2 tbsp olive oil Divided
  • 4 Greek pita breads Thick, pocketless style
  • 1 cup tzatziki sauce Thick, with visible herbs
  • 1/2 English cucumber Sliced into half-moons
  • 1/2 cup cherry tomatoes Halved
  • 1/4 red onion Thinly slivered
  • 1/4 cup feta cheese Crumbled
  • 4 sprigs fresh dill For garnish

Equipment

  • 1 Cast Iron Skillet For searing the chicken and charring the pita.
  • 1 Chef's Knife For slicing vegetables into thin slivers.

Method
 

Prepare the Chicken
  1. Toss chicken cubes with 1 tbsp olive oil, oregano, salt, and pepper until well coated.
  2. Heat a skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side until a golden-brown crust forms and internal temp is 165°F.
Char the Pita
  1. Using a gas flame or dry skillet, heat each pita for 30-45 seconds per side until light golden char marks appear.
Assembly
  1. Spread a thick layer of tzatziki on each pita. Top with seared chicken, cucumber half-moons, cherry tomatoes, and red onion slivers.
  2. Finish with crumbled feta and fresh dill sprigs before serving.

Notes

Pat the chicken dry before cooking to ensure a proper sear.
Soak red onions in ice water to remove their harsh bite.
