Greek Chicken Gyros with Creamy Tzatziki and Charred Pita

Ingredients
  

Chicken & Marinade
  • 1.5 lbs Chicken Breast cut into 1-inch chunks (680g)
  • 1/4 cup Extra Virgin Olive Oil (60ml)
  • 2 tbsp Lemon Juice freshly squeezed (30ml)
  • 1 tbsp Dried Oregano Greek variety preferred (3g)
  • 3 cloves Garlic minced (15g)
  • 1 tsp Sea Salt (6g)
Tzatziki Sauce
  • 1 cup Greek Yogurt full-fat, plain (245g)
  • 1 medium English Cucumber grated and squeezed dry (300g)
  • 1/2 tsp Black Pepper cracked (1g)
Assembly
  • 4 pieces Pita Bread thick, soft flatbread
  • 1 small Red Onion thinly sliced (100g)
  • 2 medium Roma Tomatoes diced (150g)
  • 1/4 cup Fresh Parsley chopped flat-leaf (15g)

Equipment

  • 1 Cast Iron Skillet or Grill Essential for achieving dark char marks.
  • 1 Box Grater For finely grating the cucumber.
  • 1 Kitchen Towel To squeeze moisture from the cucumber.

Method
 

Preparation
  1. Whisk olive oil, lemon juice, garlic, oregano, and salt in a bowl. Add chicken chunks and toss to coat. Marinate for 30 minutes.
  2. Grate cucumber and squeeze dry in a towel. Mix with yogurt and black pepper until thick and opaque.
Cooking & Assembly
  1. Heat skillet over medium-high. Grill chicken chunks for 4-5 minutes per side until visible dark char marks appear and internal temp is 165°F.
  2. Toast pitas in the hot pan for 30 seconds per side until soft and slightly charred.
  3. Spread tzatziki on pita, add chicken, onions, tomatoes, and parsley. Wrap tightly and serve immediately.

Notes

Ensure cucumber is completely dry for thick sauce.
Don't move chicken too early to get deep char marks.
