Greek Chicken Gyros with Homemade Tzatziki and Soft Toasted Pita

Ingredients
  

Chicken and Marinade
  • 1.5 lbs Chicken Breasts 680g, sliced into thin strips
  • 1/4 cup Extra Virgin Olive Oil 60ml
  • 1 tbsp Dried Oregano 3g
  • 2 tbsp Lemon Juice 30ml
  • 2 cloves Garlic Minced
Tzatziki Sauce
  • 1 cup Greek Yogurt 245g, full fat preferred
  • 1 large English Cucumber 300g, grated and squeezed dry
  • 1/4 cup Fresh Dill 10g, chopped
  • 2 cloves Garlic Minced
Assembly & Toppings
  • 4 large Pita Bread Soft, Mediterranean-style
  • 1 medium Red Onion Thinly sliced
  • 3 small Roma Tomatoes Diced
  • 4 sprigs Fresh Dill For garnish

Equipment

  • 1 Cast Iron Skillet Essential for achieving deep char marks.
  • 1 Box Grater Used for grating the cucumber for tzatziki.
  • 1 Kitchen Towel Used to squeeze moisture from the cucumber.

Method
 

Preparation
  1. Combine olive oil, lemon juice, garlic, and oregano. Toss with chicken strips and refrigerate for 30 minutes.
  2. Grate cucumber and squeeze dry in a towel. Mix with yogurt, dill, and garlic. Chill until ready to serve.
Cooking and Assembly
  1. Heat a cast iron skillet over medium-high heat. Sear chicken until dark golden-brown char marks appear (approx 4 mins per side).
  2. Wipe the pan and lightly toast each pita until soft and pliable.
  3. Spread tzatziki on pita, add chicken, onions, and tomatoes. Garnish with fresh dill sprigs and dried oregano.

Notes

Ensure the pan is very hot before adding chicken to get the best char.
Always squeeze the cucumber thoroughly to prevent a runny sauce.
