  • 2 lbs Chicken Breast 900g, cut into 1.5-inch chunks
  • 1/2 cup Greek Yogurt 120g, plain and full-fat
  • 1/2 cup Extra Virgin Olive Oil 120ml
  • 1/4 cup Fresh Lemon Juice 60ml
  • 4 cloves Garlic minced
  • 2 tbsp Dried Oregano divided
  • 1/2 cup Fresh Parsley 15g, finely chopped
  • 1 tsp Kosher Salt or to taste

Equipment

  • 12 Wooden Skewers Soak in water for 30 minutes before use.
  • 1 Cast Iron Grill Pan Or an outdoor grill.

Method
 

Prepare the Marinade
  1. In a large bowl, whisk yogurt, olive oil, lemon juice, garlic, and 1 tbsp of oregano until smooth.
  2. Add chicken chunks to the bowl. Coat thoroughly and refrigerate for 30 minutes to 4 hours.
Grilling
  1. Thread chicken onto soaked wooden skewers, leaving small gaps between pieces.
  2. Place skewers on a preheated grill pan over medium-high heat. Cook for 4 minutes per side until prominent dark char marks appear.
  3. Ensure internal temperature reaches 165°F (74°C). The chicken should be moist and glistening.
Serve
  1. Immediately sprinkle with remaining oregano, fresh parsley, and serve with lemon wedges and extra yogurt sauce.

Notes

Soak wooden skewers for at least 30 minutes to prevent burning.
Do not over-marinate beyond 4 hours or the acid will affect the meat texture.
