Preparation
  1. Whisk olive oil, lemon juice, dried oregano, and pepper in a large bowl. Add chicken and toss to coat. Marinate for at least 30 minutes.
  2. Thread chicken chunks onto metal skewers, packing them closely together to ensure moisture retention.
Cooking
  1. Preheat grill to medium-high. Sear skewers for 4-5 minutes per side until golden-brown edges and deep dark char marks appear.
  2. Remove from heat and place on a metal tray. Immediately sprinkle with fresh chopped parsley and coarse sea salt while glistening.

Notes

Use chicken thighs instead of breasts for a juicier result.
Always add the coarse sea salt at the very end to keep the meat tender.
