Ingredients
  

Skewers
  • 1.5 lbs boneless skinless chicken breast cut into 1-inch cubes
  • 2 large red bell peppers cut into 1-inch chunks
  • 2 medium zucchini sliced into 1/2-inch rounds
  • 1 large red onion cut into thick wedges
Glossy Herb Marinade
  • 1/2 cup extra virgin olive oil (120ml)
  • 1/4 cup lemon juice (60ml)
  • 2 tbsp dried oregano (6g)
  • 1 tsp cracked black pepper (2g)
  • 4 cloves garlic minced
  • 1.5 tsp kosher salt (9g)

Equipment

  • 8 Wooden Skewers Soak in water for 30 minutes before use.
  • 1 Outdoor Grill Can substitute with a cast-iron grill pan.
  • 1 Digital Meat Thermometer To ensure chicken reaches 165°F (74°C).

Method
 

Preparation
  1. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Reserve 3 tbsp for glazing. Pour remaining marinade over chicken cubes and refrigerate for 30-120 minutes.
  2. Soak wooden skewers in water for 30 minutes. Chop peppers, zucchini, and onions into uniform sizes.
Cooking
  1. Thread chicken and vegetables onto skewers in an alternating pattern, ensuring items aren't crowded too tightly.
  2. Preheat grill to medium-high. Grill kabobs for 10-12 minutes, turning occasionally. Chicken is done when it reaches 165°F (74°C) and shows deep charred grill marks.
  3. During the last 2 minutes, brush with reserved glossy herb oil. Remove and rest on a platter for 5 minutes before serving.

Notes

Ensure chicken and veggies are similar sizes for even cooking.
Use a meat thermometer to prevent overcooking the chicken breast.
