Ingredients
  

Greek Shrimp Bowl Components
  • 1 cup white quinoa rinsed
  • 2 cups water or broth (480ml)
  • 1 lb large shrimp (450g) peeled and deveined
  • 1 tsp smoked paprika for color and depth
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 2 tbsp avocado oil (30ml) for searing
  • 1 cup cherry tomatoes halved
  • 2 medium Persian cucumbers sliced into half-moons
  • 1/4 medium red onion thinly slivered
  • 1/2 cup Kalamata olives pitted
  • 1/2 cup feta cheese (75g) crumbled
  • 2 tbsp fresh dill and parsley chopped for garnish
  • 1/4 cup extra virgin olive oil (60ml)
  • 3 tbsp lemon juice (45ml)
  • 1 tsp Dijon mustard as an emulsifier

Equipment

  • 1 Cast Iron Skillet Essential for getting a deep char on the shrimp.
  • 1 Medium Saucepan For cooking the quinoa.
  • 1 Fine-mesh Sieve For rinsing quinoa.

Method
 

Prepare the Foundation
  1. Rinse 1 cup (185g) quinoa. Combine with 2 cups (480ml) water in a pot. Bring to a boil, سپس reduce heat and simmer covered for 15 minutes. Let rest for 5 minutes off heat, then fluff with a fork.
Sear the Shrimp
  1. Pat shrimp dry. Toss with paprika, garlic powder, oregano, and oil. Heat a cast-iron skillet over medium-high heat. Sear shrimp for 2 minutes per side until reddish-orange with visible char marks.
Assemble the Bowl
  1. Divide quinoa into two bowls. Cluster tomatoes, cucumbers, onions, and olives on top. Add shrimp and a central mound of feta. Whisk dressing ingredients and drizzle generously. Top with fresh dill and parsley.

Notes

Always pat your shrimp dry to ensure a good sear.
Rinse quinoa thoroughly to remove any bitter saponins.
