Method
- In a medium bowl, whisk together 3 tbsp olive oil, 2 tbsp lime juice, minced garlic, chopped cilantro, cumin, chili powder, salt, and pepper. Pour over the chicken in a resealable bag and marinate for at least 30 minutes.
- Slice avocados in half lengthwise and remove the pit. Brush the cut sides with 1 tbsp olive oil and 1 tbsp lime juice. Season with salt and pepper.
- Preheat grill to medium-high heat (400-450°F). Grill chicken for 6-8 minutes per side, until the internal temperature reaches 165°F. Remove from grill and let rest for 5 minutes.
- Place avocado halves cut-side down on the grill. Grill for 3-5 minutes until warmed through with visible grill marks.
- Slice the rested chicken and serve immediately with the grilled avocado halves. Garnish with extra cilantro if desired.
Notes
Tip 1: Use a meat thermometer to ensure chicken is cooked to a safe 165°F without overcooking.
Tip 2: Choose avocados that are ripe but still firm to the touch so they hold their shape on the grill.
