  • 2 lbs chicken breast cut into 1-inch cubes (900g)
  • 3 tbsp extra virgin olive oil divided (45ml)
  • 1.5 tsp kosher salt 9g
  • 1 tsp cracked black pepper 2g
  • 1/2 cup Greek yogurt or mayonnaise 120ml
  • 6 cloves garlic peeled and minced (30g)
  • 1 tbsp lemon juice 15ml
  • 1/4 cup fresh parsley finely chopped (15g)
  • 1 tsp dried red chili flakes 2g

Equipment

  • 1 Cast Iron Skillet Essential for high-heat searing and char marks.
  • 1 Food Processor Used to create a smooth, emulsified garlic sauce.

Method
 

Chicken Preparation
  1. Cut chicken breast into 1-inch (2.5cm) cubes and pat thoroughly dry with paper towels to ensure a perfect sear.
  2. Toss the chicken cubes with 1 tbsp (15ml) olive oil, salt, and pepper in a medium bowl until glistening.
Searing Technique
  1. Heat a cast iron skillet over medium-high heat. Add remaining oil. Place chicken in a single layer and cook undisturbed for 4 minutes until dark char marks appear.
  2. Flip the chicken and cook for another 3-4 minutes until the interior is juicy and the temperature reaches 165°F (74°C).
Sauce and Assembly
  1. In a food processor, blend garlic, lemon juice, and yogurt/mayo until thick, smooth, and off-white.
  2. Place chicken in a rustic bowl. Add a ramekin of sauce. Top heavily with parsley and chili flakes.

Notes

Ensure the pan is smoking hot before adding chicken to get the visual char marks.
Use fresh flat-leaf parsley for the most vibrant green garnish color.
