Chicken Preparation
- Cut chicken breast into 1-inch (2.5cm) cubes and pat thoroughly dry with paper towels to ensure a perfect sear.
- Toss the chicken cubes with 1 tbsp (15ml) olive oil, salt, and pepper in a medium bowl until glistening.
Searing Technique
- Heat a cast iron skillet over medium-high heat. Add remaining oil. Place chicken in a single layer and cook undisturbed for 4 minutes until dark char marks appear.
- Flip the chicken and cook for another 3-4 minutes until the interior is juicy and the temperature reaches 165°F (74°C).
Sauce and Assembly
- In a food processor, blend garlic, lemon juice, and yogurt/mayo until thick, smooth, and off-white.
- Place chicken in a rustic bowl. Add a ramekin of sauce. Top heavily with parsley and chili flakes.
Notes
Ensure the pan is smoking hot before adding chicken to get the visual char marks.
