  • 4 Bone-in Pork Chops 1.5 inches thick
  • 1/2 cup (170g) Raw Honey For the amber glaze
  • 1/4 cup (60ml) Apple Cider Vinegar Tenderizer
  • 1/4 cup (60ml) Extra Virgin Olive Oil
  • 2 tbsp (30ml) Soy Sauce Umami base
  • 1 tbsp (6g) Cracked Black Pepper Visible flecks
  • 1 tbsp (3g) Dried Oregano
  • 3 cloves Garlic Mince finely
  • 2 tbsp Fresh Parsley Chopped for garnish

Equipment

  • 1 Outdoor Grill Gas or Charcoal
  • 1 Digital Meat Thermometer Non-negotiable for accuracy
  • 1 Basting Brush For applying the glaze

Method
 

Preparation
  1. Combine honey, vinegar, oil, soy sauce, garlic, pepper, and oregano in a bowl. Reserve 1/3 for basting.
  2. Place chops in a bag with the remaining marinade. Refrigerate for 4-12 hours.
Grilling
  1. Grill chops at 450°F (232°C) for 4-5 minutes per side to create diagonal marks.
  2. During the final 5 minutes, baste generously with reserved marinade until a glossy amber coating forms.
  3. Remove at 140°F (60°C). Garnish with parsley and rest for 10 minutes.

Notes

Use a meat thermometer to avoid overcooking pork.
Bone-in cuts provide better flavor and moisture retention than boneless.
