Preparation
- Combine honey, vinegar, oil, soy sauce, garlic, pepper, and oregano in a bowl. Reserve 1/3 for basting.
- Place chops in a bag with the remaining marinade. Refrigerate for 4-12 hours.
Grilling
- Grill chops at 450°F (232°C) for 4-5 minutes per side to create diagonal marks.
- During the final 5 minutes, baste generously with reserved marinade until a glossy amber coating forms.
- Remove at 140°F (60°C). Garnish with parsley and rest for 10 minutes.
