- In a small bowl, whisk together all sauce ingredients: low-sodium soy sauce, toasted sesame oil, rice vinegar, honey, and cornstarch. Set aside.
- Heat avocado oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease.
- Add the minced garlic and grated ginger to the beef. Cook for 30 seconds until fragrant.
- Add the thinly sliced cabbage to the skillet. Stir-fry for 5-7 minutes, until the cabbage is tender-crisp.
- Pour the prepared sauce over the mixture. Stir constantly for 1-2 minutes until the sauce thickens and coats everything evenly.
- Serve immediately, garnished with sesame seeds and green onions if desired.

Tip 1: Don't overcook the cabbage! It's best when it still has a slight bite to it.
