Main Ingredients
  • 1 lb elbow macaroni 450g
  • 1.5 cups mayonnaise 360ml
  • 3 tbsp yellow mustard 45ml
  • 1 tbsp garlic powder 15g
  • 1/2 cup roasted red peppers 120g, diced
  • 1/2 cup peppadew peppers 120g, sliced
  • 1/4 cup green pepperoncini 60g, sliced into rings
  • 1 tsp cracked black pepper 5g
  • 1 tsp dried herb flakes 5g, parsley or oregano

Equipment

  • 1 Large Stockpot For boiling pasta
  • 2 Mixing Bowl One for dressing, one for assembly
  • 1 Whisk To emulsify the dressing

Method
 

Pasta Preparation
  1. Cook the macaroni in salted boiling water until al dente. Drain and rinse thoroughly with cold water.
  2. Ensure the pasta is completely cooled and drained of all excess water before mixing.
Dressing and Assembly
  1. In a bowl, whisk together mayo, mustard, garlic powder, and a splash of pepper brine until pale yellow and smooth.
  2. Fold in the peppers, herb flakes, and black pepper. Pour over the macaroni and toss to coat heavily.

Notes

Always rinse the pasta in cold water to prevent starchiness.
Add a splash of peppadew brine to the dressing for extra zing.
