  • 2 sheets Puff Pastry 17.3 oz / 490g total, thawed but cold
  • 8 oz Cooked Ham 225g, thinly sliced
  • 6 oz White Cheese 170g, such as Gruyère or Swiss, sliced or shredded
  • 3 tbsp Unsalted Butter 45g, melted
  • 1 tbsp Black Poppy Seeds 9g
  • 1 tsp Dried Green Herb Flakes 1g, such as parsley or chives

  • 1 Baking Sheet Lined with parchment paper
  • 1 Pastry Brush For the butter glaze
  • 1 Pizza Cutter or Sharp Knife To cut even pastry squares

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out thawed puff pastry and cut into 18 equal squares total.
  2. Place 6 squares on the tray. Layer with ham and cheese, add a second pastry square, more ham and cheese, and top with a third pastry square.
  3. Brush the tops of the stacks with melted butter. Generously sprinkle with poppy seeds and dried herbs.
  4. Bake for 20-25 minutes until the pastry is golden brown and the cheese is bubbling and browned at the edges.

Notes

Use a sharp blade to cut the pastry to ensure the layers aren't compressed.
If the pastry gets warm during assembly, chill the tray for 10 minutes before baking.
