  • 8 oz Cream Cheese Full-fat, softened to room temperature (225g)
  • 1 cup Heavy Whipping Cream Cold, 36% fat content (240ml)
  • 1/2 cup Powdered Sugar Sifted (60g)
  • 1 tsp Vanilla Extract Pure extract (5ml)
  • 1 pinch Salt To enhance sweetness
  • 1 medium Fresh Pineapple Cored and cut into 1-inch chunks (approx. 900g)
  • 1 lb Fresh Strawberries Hulled and sliced (450g)
  • 3 whole Kiwi Peeled and sliced into rounds
  • 6 oz Fresh Raspberries Whole and plump (170g)

  • 1 Electric Hand Mixer Or stand mixer for whipping the base.
  • 1 Large Clear Glass Bowl For beautiful presentation.
  • 1 Silicone Spatula For gentle folding of the fruit.

Method
 

Prepare the Creamy Base
  1. In a large mixing bowl, beat the softened cream cheese, powdered sugar, vanilla, and salt until completely smooth and velvety.
  2. In a separate chilled bowl, beat the heavy cream until stiff peaks form. The cream should be thick enough to hold its shape firmly.
  3. Gently fold the whipped cream into the cream cheese mixture using a spatula until no streaks remain, maintaining a thick, airy texture.
Assemble the Salad
  1. Ensure all fruit is chopped and patted very dry with paper towels to prevent the salad from becoming watery.
  2. Add the pineapple chunks, strawberry slices, and kiwi rounds to the bowl. Fold gently to coat in the cheesecake cream.
  3. Add the whole raspberries last, folding only once or twice to keep them intact and prevent bleeding.
  4. Transfer to a glass bowl and chill for at least 30 minutes. Serve while the fruit is glistening and the cream is cold.

Tip 1: Always pat your fruit dry; excess moisture is the enemy of a thick cheesecake salad.
Tip 2: Use room temperature cream cheese to avoid lumps, but ensure the whipping cream is ice cold for maximum volume.
