  • 1 lb Boneless Skinless Chicken Breasts approx 450g, sliced
  • 1.5 lbs Sweet Potatoes approx 680g, cubed into 1/2 inch pieces
  • 1 lb Broccoli Florets approx 450g, fresh
  • 3 tbsp Avocado Oil 45ml, divided
  • 1 tsp Dried Herb Seasoning 2g, blend of oregano and thyme
  • 1/2 tsp Coarse Black Pepper To taste
  • 1 tsp Sea Salt Adjust to taste

Equipment

  • 1 Heavy-bottomed Skillet Cast iron or stainless steel preferred for searing.
  • 1 Large Rimmed Baking Sheet Aluminum for best heat distribution.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Prepare a large rimmed baking sheet.
  2. Cube sweet potatoes and trim broccoli florets. Ensure all vegetables are completely dry.
Roasting
  1. Toss sweet potatoes and broccoli with oil and salt. Spread in a single layer on the baking sheet.
  2. Roast for 20-25 minutes until sweet potatoes are caramelized and broccoli tips are charred.
Searing Chicken
  1. Heat oil in skillet. Sear chicken for 5-6 minutes per side until golden-brown sear marks appear and internal temp is 165°F (74°C).
  2. Let chicken rest for 5 minutes before slicing into strips.

Notes

Ensure chicken is patted dry for a better sear.
Don't overcrowd the baking sheet to prevent steaming.
