  • 2 cups (180g) Old Fashioned Rolled Oats Toasted
  • 1/2 cup (45g) Slivered Almonds Toasted
  • 1/4 cup (35g) Green Pumpkin Seeds (Pepitas) Raw
  • 1/4 cup (35g) Sunflower Seeds Raw
  • 1/2 cup (75g) Golden Raisins
  • 2 tbsp (20g) Flax Seeds Whole
  • 1/2 cup (125g) Almond Butter Creamy
  • 1/3 cup (80ml) Maple Syrup Pure
  • 2 tbsp (30ml) Coconut Oil Melted

  • 1 Cookie Scoop 2-tablespoon capacity

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Spread oats and slivered almonds on a baking sheet and toast for 8-10 minutes until golden and fragrant.
  2. In a large bowl, whisk together almond butter, maple syrup, and melted coconut oil until smooth.
  3. Fold the toasted oats, toasted almonds, pumpkin seeds, sunflower seeds, golden raisins, and flax seeds into the wet mixture until a thick dough forms.
  4. Scoop 2-tablespoon mounds onto a parchment-lined sheet. Press down into 1/2-inch discs. Bake for 12-15 minutes until edges are golden-brown. Cool completely on the pan.

Notes

Press the cookies down very firmly before baking to ensure they hold together.
Let the cookies cool completely on the tray to allow the binders to set.
