  • 1/2 lb (225g) fresh green beans trimmed
  • 2 tsp (4g) smoked paprika provides the deep red coating
  • 4 cloves (12g) garlic minced
  • 3 tbsp (45ml) extra virgin olive oil divided for glazing
  • 3-4 sprigs dried thyme left whole for roasting
  • 2 tbsp (8g) fresh herb flakes parsley or oregano for garnish

Method
 

Prep and Potato Roast
  1. Preheat your oven to 400°F (200°C).
  2. Toss halved baby potatoes with 2 tbsp olive oil and salt in a white ceramic dish. Roast for 15 minutes.
Chicken and Green Beans
  1. Rub chicken breasts with remaining oil, smoked paprika, and minced garlic until fully coated.
  2. Add chicken and green beans to the ceramic dish with the potatoes. Top with dried thyme sprigs.
  3. Bake for 20-25 minutes until chicken hits 165°F (74°C) and green beans are slightly charred.
  4. Sprinkle with fresh herb flakes and let rest for 5 minutes before serving.

Notes

Ensure chicken is patted completely dry for the best paprika crust texture.
Use a ceramic dish rather than metal for more consistent potato roasting.
