Prepare Filling and Chicken
- Place chicken breasts between plastic wrap and pound to 1/4-inch thickness using a meat mallet.
- In a bowl, combine ricotta, half the parsley, chives, salt, and pepper until thick and creamy.
Stuff and Sear
- Spread ricotta over chicken, roll tightly, and secure with toothpicks. Season exterior with salt and pepper.
- Heat oil in skillet over medium-high. Sear rolls for 5-6 minutes per side until golden-brown and internal temp is 165°F.
Make Glaze
- Remove chicken. Add broth to pan, scraping up browned bits. Reduce by half.
- Whisk in cold butter until a translucent brown glaze forms. Pour over chicken and garnish with remaining parsley.
Notes
Use full-fat ricotta to prevent the filling from becoming watery.
