  • 4 large Chicken Breasts Boneless and skinless (approx. 1.5 lbs / 680g)
  • 1 cup Ricotta Cheese Full-fat / Whole milk (250g)
  • 1/4 cup Fresh Parsley Finely minced (15g), divided
  • 2 tbsp Fresh Chives Minced (8g)
  • 1.5 tsp Kosher Salt Divided (9g)
  • 1 tsp Black Pepper Divided (5g)
  • 2 tbsp Olive Oil For searing (30ml)
  • 1/2 cup Chicken Broth Low-sodium (120ml)
  • 1 tbsp Unsalted Butter Cold (14g)

Equipment

  • 1 Heavy-bottomed Skillet Cast iron or stainless steel preferred.
  • 1 Meat Mallet For pounding chicken to even thickness.
  • 8 Toothpicks To secure chicken rolls.

Method
 

Prepare Filling and Chicken
  1. Place chicken breasts between plastic wrap and pound to 1/4-inch thickness using a meat mallet.
  2. In a bowl, combine ricotta, half the parsley, chives, salt, and pepper until thick and creamy.
Stuff and Sear
  1. Spread ricotta over chicken, roll tightly, and secure with toothpicks. Season exterior with salt and pepper.
  2. Heat oil in skillet over medium-high. Sear rolls for 5-6 minutes per side until golden-brown and internal temp is 165°F.
Make Glaze
  1. Remove chicken. Add broth to pan, scraping up browned bits. Reduce by half.
  2. Whisk in cold butter until a translucent brown glaze forms. Pour over chicken and garnish with remaining parsley.

Notes

Use full-fat ricotta to prevent the filling from becoming watery.
Ensure the skillet is very hot before adding chicken to get that perfect golden crust.
